Ingredients: 3 cups baby spinach; 2 hard-boiled eggs, chopped; 4 strips bacon, cooked and chopped; 1/4 cup fresh raspberries; 1/4 cup grated mozzarella cheese; 1/4 cup glazed pecans or walnuts; 1/4 cup mayonnaise; 1/4 cup sugar; 1/4 cup red wine vinegar; 1 tsp bacon grease (optional)

My parents used to visit a locally owned restaurant in Carson City, NV called “Grand Central Pizza & Pasta.” They LOVED the spinach salad served there. After many years of loyally visiting, they convinced the chef to share his recipe for the dressing (easily the key to the recipe!). They were amazed to find out how simple it is!

The whole family will enjoy this salad. I’ve yet to meet someone who doesn’t fall in love instantly!

Ingredients

Salad ingredients
3 cupsbaby spinach
2hard-boiled eggs, chopped
4 stripsbacon, cooked and chopped
1/4 cupfresh raspberries

1/4 cupglazed pecans or walnuts
Salad dressing
1/4 cupmayonnaise
1/4 cupsugar
1/4 cupred wine vinegar
1 tspbacon grease (optional)

Add salad ingredients to a large bowl

Combine salad dressing ingredients in a microwave-safe bowl or measuring cup (add 1 tbsp left-over bacon grease if desired)

Whisk salad dressing until well combined and creamy

Microwave salad dressing for 30-45 seconds

Pour warm dressing over salad contents and toss thoroughly

Add salt and pepper to taste, serve!
