Red lentil soup - vegan

A beautiful orange soup! Very warming and a little spicy depending on how much cayenne you use.
If you like your soups smooth, you can use a hand blender at the end to purée. I prefer it ‘rustic’ with chunky veg 😁
Serve with pita or crusty bread. A dollop of yogurt on the side is nice too if you do dairy. #vegan #vegetarian

Ingredients

2 servings
  1. 1-2 tbspolive oil
  2. 2 tspground cumin
  3. 1 tspground turmeric
  4. Generous pinch cayenne pepper
  5. 1/2onion, peeled and chopped
  6. 2 clovesgarlic, peeled and crushes
  7. 2carrots, chopped quite small
  8. 2celery sticks, chopped quite small
  9. 1potato, peeled and chopped quite small
  10. 1/2 cupred lentils
  11. 750 ml- 1 l vegan/ veggie stock: i start with 750ml and add more if needed
  12. juice of half a lemon
  13. to tastesalt and pepper
  14. Some chilli flakes and parsley leaves to garnish if you like

Steps

  1. 1

    Heat the oil in a pan on medium heat. Add the onion and sauté for 10 mins til the onion is soft.

    Add the cumin, turmeric, cayenne and garlic. Sauté for a few mins.

    Add the carrots and celery. Stir for a minute or two. Add the potato. Sauté for a few mins.

    Add the lentils and the stock. Simmer for 25 mins or so until the vegetables are tender. Stir in the lemon juice and season to taste.

    Sprinkle some cumin or chilli flakes on top. And a few parsley or celery leaves. Enjoy 😋
