Fried crunchy Indian cookies that literally melt in your mouth!

Combine the ghee and milk in a bowl

Mix and microwave for 30 to 60 seconds, so the ghee melts completely

Take the bowl off the microwave and mix all the contents well

Add the sugar and mix to dissolve.

Add the semolina and salt

Mix all the ingredients very well so that the mix is lump free

Add the flour, In batches to knead a soft but not sticky dough

Add a tablespoon of ghee if needed(if the mixture is too dry)

Once done, cover the dough with a cling wrap and let it rest for 30 minutes.

Post resting, divide the dough into 4 smaller balls

Heat oil for deep frying in a wok

Work on one dough ball at a time by rolling it as thin as you can(you may dust some flour/grease the working surface before rolling)

Cut zig zag pieces using a sharp knife

Deep fry each pieces until brown and crisp. (Each piece will puff up after frying)

Repeat the same steps for the remaining 3 dough balls

Let the fried pieces(shakarparas) rest out on a kitchen tissue until completely cooled

Store airtight and enjoy with your Diwali sweets

TIp: use sugar and salt as per your own taste preferences
