Mix the flour and salt in a bowl.

Add the water and stir with a spoon until a dough starts to form.

Transfer the dough to a countertop and knead by hand until smooth. Don’t worry, the dough won’t be sticky.

Divide the dough into portions of about 1 3/4 ounces (50 grams) each and shape them into balls.

Use a rolling pin to roll each ball into a tortilla about 8 inches (20 cm) in diameter.

To cook the tortillas, heat a heavy-bottomed skillet over high heat. Once hot, reduce the heat slightly to medium-high to keep the pan hot without burning the tortillas.

Place a tortilla on the hot skillet. When the edges start to lift, flip it over. Let it cook until it starts to puff up and form bubbles, then flip it again and cook for a few more seconds until the bubbles are lightly browned.

As you finish each tortilla, wrap it in a cotton towel to keep warm while you cook the rest.
