Mutton and veg yakhni pulav

In a pressure cooker, add all the whole spice and mutton, 1&1/2 litre water.cook till mutton is 80 percent cooked.

In a different pot, add oil and chopped onion and cook till the onions are translucent and the raw smell goes away(don’t brown the onion)

Add ginger garlic paste and sauté, add cumin and coriander powder and green chillies.once it’s cooked, add yogurt / curd.

Add all your vegetable and cook on slow to medium flame.

Add the mutton pieces and let it cook till the oil separates.

Add the strain the stock, let it boil and add salt.add washed and soaked rice.

Cooking low flame till rice is completely done.add a could of tablespoon of ghee on the side and turn rice gently.

Garnish with brown onion and fresh coriander. Serve with raita and papas.

You can add live charcoal and ghee to the pot to get a smoky flavour in pulav.
