Yam with oil bean (ugba) sauce

Peel and boil the yam till soft and set aside. Roughly blend the onions and pepper together and also set aside.

In a low heat heat the groundnut oil with a drop of red oil for a minute then add the roughly blended pepper and onions allow to fry for 3 minutes,

Add a cube of maggi and the oil bean with a pinch of salt and allow to fry for few minutes. Your oil bean sauce is ready. NOTE : THE DROP OF RED OIL IS TO GIVE IT A NATURAL TASTE
