Ingredients

90 mins
12 servings
  • 2 cupswhole wheat flour (also works with white)
  • 1/2 cupbread flour or all-purpose flour
  • 2tea yeast (1 packet instant or active)
  • 2tbls sugar
  • 1tea salt
  • 1 cup1% milk (heated to 120 F for instant or 110 F for dry yeast)
  • 2tbls olive oil (or any vegetable oil)
  • 1egg (room temperature)
  • 1/4 cupadditional bread flour (about)

  1. 1

    Place flours, yeast, sugar & salt in a mixing bowl.

  2. 2

    Stir in milk, followed by oil and egg.

  3. 3

    Beat on high for 2-minutes.

  4. 4

    On low speed add about 1/4 cup bread flour until dough forms a mass.

  5. 5

    Place dough on floured surface and knead for 50 turns.

  6. 6

    Cover and rest for 10-minutes.

  7. 7

    Shape into a loaf (flatten and roll) and place in greased tin (1/2 x 4-1/2 x 2 3/4-inch loaf pan).

  8. 8

    Cover and let rise for about 30 to 40 minutes or until the loaf is about 1-inch above the pan.

  9. 9

    Pre-heat the oven to 375 F.

  10. 10

    Bake for 30-minutes. After the first 15-minutes you may want to cover the top with a foil tent to prevent over browning.
