Peel the potatoes and grate the onion. Chop a little cilantro or parsley. Place the potatoes in a pot of water and bring to a boil. Cook until tender, then drain and mash the potatoes.

In a pot or skillet, heat a little oil and sauté the shrimp until cooked through. Remove and chop the shrimp into small pieces. Add the grated onion to the skillet and cook until golden, then remove.

Add salt, a pinch of ground black pepper, one egg, the sautéed grated onion, chopped shrimp, and chopped cilantro or parsley to the mashed potatoes. Mix everything together thoroughly.

Beat two eggs and set out some breadcrumbs. Shape the potato mixture into croquettes with your hands. Dredge each croquette first in flour, then in beaten egg, and finally in breadcrumbs.

Heat oil in a skillet. When the oil is hot, fry the croquettes until golden brown.

Place the cooked croquettes on a plate lined with paper towels to absorb excess oil. Let them rest for a few minutes before serving.
