Ingredients

12 servings
  1. 2 poundssmoked sausage
  2. 6large carrots
  3. 58 ouncessauerkraut
  4. 1 poundsmoked bacon
  5. 2large red potatoes
  6. 1 teaspooncelery salt
  7. 1 teaspoonfinely ground black pepper
  8. 1 cupparsley, chopped
  9. 1/3 cupparsley, chopped
  10. 1large onion chopped

Cooking Instructions

    Preheat oven 400° Fahrenheit

  2. 2

    Wash the carrots. Slice the carrots into bite sized medallions lay in bottom of a roaster

  3. 3

    Take casing off sausage and slice the length of the standard hotdog length

  4. 4

    Add half the sauerkraut.

  5. 5

    Wash and chop the potatoes into bite sized pieces. Leave the skin on

  6. 6

    Add 1 cup parsley

  7. 7

    Layer rest of sauerkraut on top.

  8. 8

    Add chopped onion, bacon and rest of parsley. Have the bacon on the top with parsley topping all.

    Bake 1 hour covered until bacon is done. Uncover for last 15 minutes.

    Let sit 10 minutes. Serve I hope you enjoy!
