Stir fried veggies with fried Irish and eggs

Wash and slice all your veggies and set aside.

Wash your beef and season in a pot and cook till done.

Wash and slice your leaf very thin.

Boil your eggs, let cool and then peel off the shell and set aside.

Wash your periwinkle properly and set aside

In a nonstick frying pan pour in your coconut oil and fry your onion, then add your fresh pepper. After a while add your veggies. Continue to stir then add your periwinkle, smoked fish and beef. Taste for seasoning and add as required. Lastly, add your sliced green leaf. Let cook for about a minute then drop from fire. Be careful not to over cook your veggies, you still want them crunchy and fresh.

Slice your Irish potatoes in the shape you want and fry in oil until golden brown or as you like it.

Arrange everything in your plate and enjoy your bowl of healthy deliciousness.
