Pound the garlic and chili peppers together in a mortar until very fine. Crushing the garlic releases more flavor, making the sauce tastier than just using minced garlic.

Transfer the pounded garlic and chili mixture to a bowl. Add the sugar and MSG. Pour in 3 tablespoons of water and stir until the sugar dissolves completely. Then add the fish sauce. Squeeze in about 1 to 2 wedges of lime, adjusting to your preferred level of tartness. Your flavorful fish sauce is ready to serve.
