Ingredients

  1. For gulabjamub
  2. 2 cupWhole dried milk / mawa -
  3. 1 cupCottage cheese / paneer -
  4. 2 tbspAll purpose flour / maida -
  5. 4 tbspMilk -
  6. 1 tbspClarified butter / ghee -
  7. 1 cupSugar -
  8. 1 and 1/2 cupWater -
  9. 1/4 tspCardamom powder -
  10. 1 pinchBaking powder -
  11. as neededOil - for frying
  12. For rabri
  13. 1.5 cupMilk -
  14. 250 gmsMawa /whole dried milk -
  15. 2-3 tbspSugar -
  16. few strandSaffron -
  17. 1 tbspRoughly chopped pistachio -

Steps

  1. 1

    Grate the mawa /whole dried milk and cottage cheese / paneer and mix well.

    We mash the cottage cheese / paneer and mawa /whole dried milk very well and make a soft and smooth dough.

    Add all purpose flour / maida,baking powder,milk and clarified butter/ghee and mix well.

    Divide the dough in equal size balls.

  5. 5

    Roll each balls between your palms.

  6. 6

    All the balls are made in the same way.

  7. 7

    Heat enough oil in a pan for deep frying.

  8. 8

    Fry the gulab jamun on low heat till golden brown.

  9. 9

    Drain in paper napkin

  10. 10

    Again heat the pan.

  11. 11

    Add sugar and water till sugar disloves.

  12. 12

    Keep it medium flame for 8 - 10 mins.

    When it gets stick it means syrup is ready add cardamom powder.

    Place the gulab jamun in the sugar syrup.

    Serve after two hours.

    For rabri
    Heat milk in a heavy bottom vessel.

  17. 17

    When it boils keep in a low flame.

  18. 18

    Add mawa/whole dried milk,saffron and sugar and mix well.

  19. 19

    And when it gets thick we switch off the gas.

  20. 20

    Pour the hot rabri in the bowl and squeeze the gulabjamun and place in the rabri bowl.

    Garnish with pistachio.

  22. 22

    Serve after an hour
