Ingredients

2 servings
  1. For the pineapple coconut sorbet:
  2. 1 cup(I used about 11/2 cups of chopped pineapple) fresh pineapple juice
  3. 1/2 cupfresh coconut meat (the white part removed from coconuts that are still green)
  4. 1 tbspsugar (optional)
  5. For the mocktail:
  6. 1-2 scoopspineapple coconut sorbet
  7. 1 1/2 cupsfresh coconut water, chilled
  8. 12-14fresh mint leaves
  9. 1 tspsugar (optional)
  10. 1 tbsplime or lemon juice
  11. For serving:
  12. 2tall or Collins glasses
  13. sprigsmint
  14. fresh pineapple wedges
  15. 2pineapple leaves (optional)

Steps

  1. 1

    Preparation of the pineapple coconut sorbet:

    Strain the fresh pineapple juice to remove any fibers.
    Add the juice and coconut meat into a blender.

    Add sugar only if the pineapple juice is not sweet.
    Process till you get a smooth thick mixture.

  3. 3

    Pour this mixture into a small container and freeze for 2-3 hours.

  4. 4

    Preparation of the cocktail:

    Add the coconut water, lemon or lime juice and mint into the blender.
    Add sugar only if the coconut water is not sweet.

  6. 6

    Process till the mint is finely chopped.
    Divide this liquid between 2 glasses.
    Add some crushed ice if you want the drink really cold.

    Add 1-2 scoops of the pineapple coconut sorbet.
    Decorate with mint sprigs, pineapple wedges or as you wish and serve immediately.

    Add coconut cream instead of coconut meat if you wish.
