Banana cake (gluten/dairy free)

Last summer, after being given a diagnosis of CFS, I visited a nutritionist to see if she could help me overcome a lengthy battle with fatigue. She suggested I give up gluten and dairy (amongst other things!) for a while. I obviously went shopping immediately and bought all sorts of goodies (a lot of which are still in my cupboard!) However, one ingredient that I have used frequently is coconut flour and, attached to the front of the packet was a recipe for a banana and chocolate loaf. I adapted it to suit the family and, hence this banana cake was born! (I have made this purely with almond flour too which is gorgeous but way to expensive to keep making!)

Ingredients

40 minutes
1 small loaf cake
  1. 2large ripe bananas, mashed thoroughly
  2. 3medium eggs, beaten
  3. 1 teaspoonvanilla extract
  4. 40 mlcoconut oil (melted)
  5. 1 teaspooncinnamon
  6. 1 teaspoonbaking powder
  7. 50 gcoconut flour (or a mix of coconut and almond flour/just almond flour)
  8. 1 tbsp.chia seeds
  9. 1 tbsp.honey

Steps

40 minutes
  1. 1

    Mix the eggs, bananas, coconut oil, honey and vanilla extract together in a large bowl.

  2. 2

    Stir the baking powder, chia seeds and cinnamon into the flour(s) and add to the wet ingredients. Mix well.

  3. 3

    Line a small loaf tin with baking parchment and pour in the mixture.

  4. 4

    Cook in a preheated oven (170˚ c) for approximately 30- 40 minutes or until a skewer comes out clean when placed in the centre of the loaf.

  5. 5

    Serve with a lovely hot cuppa!!

Ive actually now adapted this recipe to be sugar free (other than the fruit sugars in banana) and ive swapped the coconut flour for almond flour and ground almonds. Its so much better -less dry and dense yet v moist. Yum!
