Baked carrot fritters with carrot tops - vegan

These are great with a green salad or as part of a buddha bowl or a side. I usually just put carrot tops in a salad but this time around thought i’d use them in fritters. Coriander and/or rocket would work well too. #vegetarian #vegan

Preheat the oven to 200C.

Put the carrot, onion, garlic and carrot tops in a bowl and mix.

Add all the spices and mix well.

Add the flour and mix well. Gradually add the water and combine. The easiest way is to use your hands.

Bring the mix together into a ball. Let it sit for 10 or so minutes.

Shape into balls. About 1/3 cup in size. And lay out on a lined baking tray. Flatten each ball so they are about 1.5 cm thick.

Bake for about 25-30 mins. Turn them over halfway through.
