Ingredients

20-30 minutes
  • Dry ingredients
  • 1. 270gm All purpose flour
  • 2. 1tsb bicarbonate soda
  • 3. 160gm caster sugar
  • 4. 1tsb cinnamon powder (i like the aroma)
  • 5. 100gm cashew nuts (i used ground nuts instead)
  • Wet ingredients
  • 1. 300gm mashed ripe bananas
  • 2. Zest/juice of 1 lime (if you don't have lime use lemon)
  • 3. 1tsb lime/lemon zest
  • 4. 300gm pineapple diced(ensure its sweet, i used canned)
  • 5. 1/2 cup oil
  • 6. 2 eggs

Steps

20-30 minutes
  1. 1

    In a large bowl mix all the WET ingredients from the wet list, and mix well using a whisk

    In another bowl sieve flour, bicarbonate soda and Cinammon. Add sugar. Put the nuts and mix all the dry ingredients using a whisk.

    In the bowl with dry ingredients, make a hole in the middle and pour your mix of wet ingredients.

  4. 4

    Fold in gently till its just combined.

  5. 5

    Pour the batter into a greased tin and bake for 20-30 minutes or until the skewer/toothpick comes out clean.

  6. 6

    Once the cake is ready, remove from the oven and let it cool. Enjoy with chilled lime juice 🥤 or your favorite beverage
