Hummus with Tahini (Mutabbal Hummus)

In a blender or food processor, combine the cooked chickpeas, tahini, lemon juice, salt, citric acid, and a little of the chickpea cooking water or plain water. Blend until very smooth.

Note: If you don't have an electric appliance, mash the chickpeas by hand, then add the remaining ingredients and mix well.

Garnish with whole chickpeas, vegetables or pickles, and a sprinkle of paprika. Drizzle with olive oil and serve alongside grilled meats, beef shawarma, or as you like. Enjoy!
