Ingredients

4 servings
  1. 2-12 oz bagsfrozen cauliflower florets
  2. 1/3 clow-sodium chicken broth
  3. 1/4 csour cream
  4. 1-1 ozpacket ranch salad dressing and seasoning mix
  5. 1/4 tspsalt
  6. 1/4 tspblack pepper
  7. 1 bag (12 oz)frozen broccoli florets
  8. 1 cdiced ham
  9. 1 cshredded sharp cheddar cheese
  10. 1/2 cfresh chives, chopped
  11. 5 slicesturkey bacon, cooked and chopped

Cooking Instructions

    Preheat oven to 350°F. Coat 9x13-inch baking dish with cooking spray.

    Microwave both bags of cauliflower according to package. Drain and place in large bowl.

    Add in broth, sour cream, seasoning, salt and pepper. Combine well with either an immersion blender or potato masher.

    Microwave boccoli according to the package. Drain.

  5. 5

    Fold broccoli, ham, 1/2 c cheese and 1/4 c chives into the cauliflower mixture. Pour mixture into baking dish.

    Bake 20 min. Top casserole with bacon, remaining cheese and chives. Bake 7-8 min. until cheese melts.
