Ingredients

  • 2large lamb shanks
  • 2 canscrushed tomatoes
  • 2large diced red peppers
  • 2large diced yellow peppers
  • 1large diced red onion
  • 2-3 clovespuréed garlic
  • 1 Tblsolive oil
  • to tasteRosemary, Thyme, Salt and Pepoer
  • 1 boxsliced button or shiitake mushrooms

Steps

  1. 1

    In a 12 quart nonstick stock pot add olive oil and herbs with veggies and sweat them about 10 mins.

  2. 2

    In a large skillet brown lamb shanks.

  3. 3

    Add crushed tomatoes to stock pot and more herbs as necessary. Bring to a low boil.

  4. 4

    Bring stock pot down to a simmer on low and add lamb shanks ensuring liquid completely covers them.

  5. 5

    Simmer approximately 3-4 hours. Low and slow!

  6. 6

    Serve over mashed potatoes or pasta!
