Ingredients

  1. 2 cupsGram Flour / Besan
  2. 2Eggs
  3. 1 tablespoonBaking Powder
  4. 1 teaspoonfreshly ground Black Pepper Powder
  5. 1/4th teaspoon Red Chilli Powder
  6. 1/2 teaspoondried Rosemary
  7. 1heaped teaspoon dried Oregano Seasoning
  8. 1 teaspoonWhite Sesame Seeds
  9. 1 teaspoonFlax Seeds
  10. as per taste Salt
  11. 1/2 teaspoonSugar
  12. 1 tablespoonchopped, fresh Coriander Leaves
  13. 3/4th cup steamed Corn Kernels
  14. 1 teaspoongrated Ginger
  15. 1 teaspoonfinely chopped Garlic
  16. 2medium sized finely chopped Onions
  17. 2finely chopped Green Chillies
  18. 1/4th cup cold Milk
  19. 2-3 tablespoonsgrated Cheese (Cheddar / Mozzarella)
  20. 2-3 tablespoonsfresh Cream
  21. 3/4th cup Water
  22. 3 tablespoonsOlive Oil

Steps

  1. 1

    Pre-heat oven to 150 Degree Celsius.

  2. 2

    In a mixing bowl, put in the besan, baking powder, dried rosemary, pepper powder and salt to taste.

    Add 1 tablespoon olive oil and the water, whisk to make a smooth batter.

  4. 4

    Add the fresh coriander leaves and leave the batter to rest for 15-20 minutes.

    Get the chopped ginger, garlic, onions and green chillies together.

    In a non-stick pan, heat the rest of the olive oil.

    Add the ginger, garlic and green chillies and saute.

  8. 8

    Add the sesame seeds and stir in.

  9. 9

    Add the chopped onions and fry till translucent.

    Add the steamed corn, the sugar, salt to taste and the dried oregano seasoning, red chilli powder and saute together for 1-2 minutes.

    Take off heat and set aside to cool.

    Beat the eggs until frothy.

  13. 13

    Add the cold milk and beat again.

  14. 14

    Now slowly add the besan batter into the cooled corn mixture and stir in.

    Gently also fold in the egg-milk mix into this.

    Pour this entire batter into a greased baking tin.

    Sprinkle the grated cheese on top.

    Dot with thick blobs of the fresh cream on top.

    Sprinkle some flax seeds on top of this.

    Bake in the pre heated oven at 125-130 Degree C for 25-30 minutes till it turns brown on top.

    Remove from oven after the stipulated time after doing the knife test to ensure that the quiche is cooked from inside.

    Allow it to cool.

    Cut into meat squares, serve with tomato ketchup or green chutney on the side.

    You can add chopped spinach, grated carrots or beets, cubed cottage cheese/ paneer to the batter to add more colour and flavour.
