Ingredients

  • 1.1 lbsmussels (about 500 grams)
  • 4 tablespoonscrispy frying flour (or tempura flour)
  • 1 tablespoonlight soy sauce
  • 1 tablespoonseasoning powder (such as chicken bouillon)
  • 3/4 cupice-cold water (200 ml)
  • 1 tablespoonvinegar
  • 1 tablespoonground black pepper
  • Green onions, to taste
  • Minced garlic
  • Bean sprouts, to taste
  • Dipping sauce for fried mussels
  • 5 tablespoonschili sauce
  • 3 tablespoonssweet chili sauce

    Prepare all your ingredients as listed.

    Start by mixing the flour with all the seasonings. Add the ice-cold water and vinegar, then stir until smooth. Let the batter rest for about 15 minutes.

    Add the mussels to the batter and sprinkle in green onions. Mix well. Heat oil in a pan until hot, then spoon the mussel mixture into the pan. Add eggs if desired, and fry until crispy.

    Once the mussels are crispy, add minced garlic, then toss in the bean sprouts and stir just until they're slightly cooked.
