Lobia / black-eyed peas salad

What do you do when you realise that you have boiled extra legumes(ready lobia / black eyed peas) than needed..? Well what I do is probably the easiest and the least creative way of using leftovers but the outcome inspite of being simple, is a stunner. Actually my husband loves Lobia ki sabzi, even I love it but recently I have put on a few kilos and try to eat my favourite food in a healthy way, using minimum oil and spices. So when I found a bowl full of Lobia lying in my refrigerator all I thought of doing was making a simple Lobia salad with a basic olive oil, lemon, black pepper and salt dressing instead of Lobia curry. You can make this salad as a side when you have unexpected guests or when you feel hungry and don't want to cook. So here is the quick recipe... Ingredients

2 servings
  • 1 +1/2 cup boiled and strained Lobia
  • 1medium size onion finely chopped
  • 1medium size tomato finely chopped
  • 1green chilli finely chopped
  • as neededFew lettuce leaves washed and roughly chopped
  • 1/4 cuppomegranate arils
  • 1 tbspextra virgin olive oil
  • 1 tbsplemon juice
  • to tasteSalt and pepper

    Mix everything in a mixing bowl and serve cold on bed of lettuce leaves.
