Add the first three ingredients (condensed milk, castor sugar and brown sugar) into a big microwaveable bowl. Do not mix or stir.

Pro tip I learned from my grandmother** spray the top part of the bowl with some non-stick spray to prevent the mixture from boiling over.

On high (100%) microwave for 2 minutes

Using a wooden spoon, stir until all the ingredients are well mixed and combined.

Spray a dish with non-stick spray to pour the fudge into at the end.

Be careful - the fudge as well as the bowl will become extremely hot as you continue.

On high (100%) microwave the mixture for up to 12 minutes or until golden brown. Stopping with 2 min intervals to stir the mixture through. You will notice the consistency change. **place the wooden spoon in a bowl of water in between the mixtures. DO NOT LICK THE SPOON!!!!! You will regret it!

After the 12 min (or golden brown state) remove from the microwave and add both the vanilla essence and vinegar. CAUTION as the fudge will boil up really quickly!

Mix well and pour into the sprayed dish and spread it out evenly with the wooden spoon. Keep in mind it's still HOT!!! You are welcome to add garnish like biscuits or chocolate chips if you choose.

I sprinkled some grated top deck onto mine. Let cool and cut into pieces and store in a airtight container. Do not refrigerate.
