Ingredients

  1. 2 tablespoongram flour
  2. 4 tablespoonoil
  3. 1drum stick
  4. 6lady fingers
  5. 1/2 cupcluster beans
  6. 2potatoes
  7. 1 cupgrated tomatoes
  8. 1 tablespoongreen chilli and ginger paste
  9. 5curry leaves
  10. 1 teaspoonturmeric powder
  11. 1 teaspoonchilli powder
  12. 1 teaspoonfenugreek seeds
  13. 1 teaspooncumin seeds
  14. 1 teaspoonmustard seeds
  15. 1/2asafoetida
  16. 2 tablespoontamarind pulp
  17. 1 piecejaggery (optional) about 1 inch
  18. to tasteSalt
  19. 1/4 cupchopped coriander to garnish
  20. 1 tablespoonghee (optional)

Steps

  1. 1

    Preparation:-
    Chop potatoes, carrots, drum stick, lady finger and cluster beans.

    In a pan heat oil and add mustard, cumin, fenugreek seeds. Let it flutter. Once done add curry leaves and gram flour. Roast the gram flour until its golden brown. Add turmeric powder, chilli powder and salt to taste.

    Add about 1/2 litre of water and bring it to boil. Once boiled add vegetables and add another 1/2 litre water and let it cook until all vegetables are cooked. Add tamarind and jaggery and cook for 2 more minutes.
    Remove in serving bowl and add ghee if desired and garnish with coriander. Enjoy with rice or roti.

    You can add more vegetables such has ivy gourd, peas, karela etc. or any seasonal vegetables.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
