Ingredients

  • 1.1 lbsbeef (500 grams)
  • 2 handfulsgarlic, pounded
  • 1/2small rice scoop ground turmeric (about 1 teaspoon)
  • 1rice scoop ground cumin (about 2 teaspoons)
  • 2 1/2rice scoops curry powder (about 5 teaspoons)
  • 2rice scoops granulated sugar (about 4 teaspoons)
  • 2 handfulscoriander seeds, pounded
  • 1 cancoconut milk
  • as neededWhole milk,
  • Skewers for satay
  • For the Satay Sauce:
  • 3/4 cupcoconut milk (200 grams)
  • 3.5 ozmassaman curry paste (100 grams)
  • 1-2rice scoops palm sugar (about 2-4 teaspoons)
  • 2rice scoops tamarind juice (about 4 teaspoons)
  • Pinchsalt
  • 2-3rice scoops roasted peanuts, ground (about 4-6 teaspoons)
  • For the Cucumber Relish (Ajad):
  • 4parts distilled white vinegar
  • 3.5parts granulated sugar
  • Pinchsalt
  • Cucumber (cut into small pieces)
  • Red chili, thinly sliced
  • Shallots or red onion, thinly sliced

Steps

    First, wash and clean the beef, then cut it into pieces. Marinate the beef with about 2 handfuls of pounded garlic, 1/2 small rice scoop (about 1 teaspoon) ground turmeric, 1 rice scoop (about 2 teaspoons) ground cumin, 2 1/2 rice scoops (about 5 teaspoons) curry powder, 2 rice scoops (about 4 teaspoons) granulated sugar, 2 handfuls of pounded coriander seeds, 1 can (medium size) coconut milk, and a little whole milk. Mix everything well and let it marinate for about 1 hour.

    While the beef is marinating, prepare the cucumber relish. Wash the cucumber, chili, and shallots or red onion, then cut them into small pieces. In a pot, combine vinegar, salt, and sugar. Simmer over medium heat until it thickens slightly, then let it cool. Add the sliced chili, shallots or red onion, and cucumber.

    For the satay sauce, simmer the coconut milk over medium heat until it starts to get hot. Add the massaman curry paste, then season with palm sugar, tamarind juice, salt, and ground roasted peanuts. Stir everything together until well combined, then set aside.

    Finally, grill the marinated beef. Thread the beef onto skewers, then grill in a pan over medium heat. Turn the skewers occasionally and grill until the beef is cooked through and nicely colored. Serve and enjoy.
