Kerala traditional fish curry is prepared in earthen pot called as “Manchatti”. Sardines cooked in mud pot is known as “Mathi Chatti curry”.

Sardines are such a versatile seafood and can be made in variety of ways from Deep frying to Thoran to Steaming to Spicy Red Curry to Coconut based Curry. Mathi Chatti curry is pure Kerala authentic and it’s the way my mum cooks. When we talk of authentic taste straight from the land of coconuts and seafood, Kerala, then we should stick to the original and natural ingredients such as shallots, fresh coconut, coconut oil and mud pot.

In another pan heat 1 tbsp of coconut oil, add ½ tbsp. mustard seeds and let it splutter. Add the sliced onions and whole red chilli and allow it to brown. Pour this temper over the Mathi / Sardines curry and cover with lid for some time. Covering the gravy after tempering is the key step for the tempering flavor to amalgamate.
