The Lebanese Lentil Stuffed Brinjal with garlicky curd dip is a delicious appetizer that you can make for your parties. You can serve it along with a cold salad by the side to enjoy your meal.

Brinjal cut into 2 halves. Sprinkle some salt.

Heat a pan grease with little oil and roast the brinjal till golden brown. Keep it aside for 10 minutes. Scoop out the pulp and keep aside.

#For_Stuffing Heat oil in a pan. Add garlic and onion and saute till the onions are translucent.

Add salt and tomato and cook for 2-3 minutes.

Add bellpeppers, jeera powder, baharat masala, brinjal pulp and masoor and mix well.

Add paneer, coriander leaves, ketchup and water and mix well and cook for 3-4 minutes.

Add red chilli powder, coriander powder and cook well.

Add cheese and mix well. Stuffing is ready.

#For_Curd_Dip Mix the all ingredients in a bowl. Dip is ready.

#For_Serving : Now stuff each half with the stuffing and garnish with curd dip, cheese, coriander leaves, chopped tomatoes and sprinkle red chilli powder and enjoy.
