Cucumber and tomato styles

This is a salad I make ALL summer. This is just the basic recipe but you can think outside the box with this and add Parmesan, pepperoni, provolone, salami, additional veggies like roasted peppers or celery etc etc. Its so simple but delicious!

I don't like too tangy of cucumber salad. This salad is just right but I am sure that if it is too tangy you could add more water and if it is not tangy enough just add more vinegar.

I was making a salad and decided to make a sandwich. I was only going to do tomato but then I thought hmm how about this. I tried it and I loved it. will do this again but next time I am adding more spice!!

For this salad, I use European or Persian cucumbers because they look nicer, have almost no seeds, and have very thin skin. You can use thick-skinned cucumbers, but you'll need to peel them or leave strips and remove the seeds if you don't like them.

I recommend raspberry walnut Vinaigrette for the dressing
