Ingredients

  1. 1 bowlbesan/chickpea flour
  2. to tasteSalt
  3. to tasteRed chilli powder
  4. 1 pinchCooking soda
  5. 1/3 spoonajwain seeds
  6. 2 spoondahi/curd
  7. 2 spoonghee
  8. Water to boil kadi in
  9. ~for gravy~
  10. 2onions
  11. 2tomatoes
  12. 7-8garlic cloves
  13. Small piece of Ginger
  14. 2green chillies
  15. 2 spoonghee/Oil
  16. 1/3 tspCumin seeds
  17. to tasteSalt
  18. Water as required
  19. To tasteChilli powder
  20. 1/2 spoonturmeric
  21. 1/4 tspgaram masala

Steps

    Take a big bowl and add besan, salt, chilli powder, ajwain and cooking soda to it and mix it well. Now add curd and ghee to it. If need add water to knead a smooth dough. Curd and ghee add a softness to the gatta.

    Now take some portion of the dough and roll it between your fingers in a thck and long cigar shape like shown in the pic. Make these long sigar shapes out of all the dough and add them to the boiling water in a pressure cooker. Add enough water so the cigars will be covered with it. Put the lid of cooker on and let it cook till one whistle. Then switch the flame off and let it cook in the steam.

    Now take mixing jar and add the onions, tomato, green chilli, garlic and ginger in it and blend it all together into a smoth paste.

    Now take a pan and add ghee in it. Once heated add the cumin seeds then add the onion tomato paste to it and let it cook on medium flame. Keep stirring it so it won't burn or stick to the bottom of the pan.

    While the tadka is cooking, take out the cigars of gattas out of the pressure cooker. Keep the water aside and cut these cigars into small round shapes as shown in the pic.

    Once the tadka in the pan seems to have dried up then add turmeric powder, salt, and chilli powder to it and mix it well, add some water to ease the cooking process of the dry masala, just a spoon or two. Let it cook for couple minutes once you see tadka leaving the sides of pan and the ghee getting separated from the tadka as well then add the cut gatta pieces to it. Remember the water we boil our gattas in and kept aside,now add that water to the veggie and let it come to a boil.

    You can add more water to it as per your requirement. Let it boil for a couple minutes or until you feel all the flavours have mixed and then you can add the garam masala to it and switch of the flame. Your gatte ki sabji is ready to eat.
