Ingredients

  • For Bhatura:-
  • 2 cupmaida / all urose flour
  • 1/2 cupsuji / semolina
  • 1/2 cupcurd
  • 1/2 tspsalt
  • 1 tspsugar
  • 1 tbspoil
  • 1/4 tspbaking powder
  • as neededOil for frying
  • For chole:-
  • 2 cupchickpeas
  • 3-4medium size onion
  • 2green chilli
  • 2small tomato
  • 1/2 cupcurd
  • 8-10garlic cloves
  • 1" ginger piece
  • 1-1/2 tspred chilli powder
  • 2 tbspcoriander powder
  • 1/2 tspturmeric powder
  • 1 tbspchole masala
  • 1 pinchajwain / carom
  • 1 Pinchhing / asafoetida
  • 1-2bay leaf
  • 1star anise
  • 4-5black pepper
  • 1cinnamon stick
  • 2-3clove
  • 1-2cordamom(black &green)
  • 1 tbsptamarind pulp/Amchur powder
  • 1 tbspchopped coriander
  • 1/4 tspKasuri methi
  • 1 tea bag /1 tsp tea leaves
  • to tasteSalt
  • 4 tbspOil

Steps

  1. 1

    For bhatura:- take a bowl put maida,suji, curd, salt,baking soda,baking powder and mix well now add sufficient water to make soft dough now apply oil to it and let it rest for 2 hours

    Now knead dough and make small balls and roll it with rolling pin like a puri

    Now heat oil in a kadai and fry bhaturas till light golden colour

    Now crispy bhatura is ready

    For chole :- soak chickpea with pinch of baking soda in sufficient water for 7-8hour

  6. 6

    Now change the water of chickpea

  7. 7

    Now put chickpeas in cooker with sufficient water and add tea bag,1clove,2- 3 garlic clove, 2-3black pepper,1cinnamon stick,1 cardamom and cover the lid and take 4-5 whistle. (If tea bag is not available then take muslin cloth and put tea and cover properly and put a knot to it.)

    Now open the cooker and remove tea bag

    Take a jar put onions, green chilli,ginger,garlic and grind it

    Now take a pan put oil heat it and add bay leaf, cumin seed, staranise, clove, cardamom, cinnamon stick, pinch of hing and ajwaIn and stir it
    Now add onion paste and saute it Now add finely chopped tomato and saute for few minutes

    Now add turmeric powder, coriander powder,red chilli powder, chole masala powder and mix well

    Now add chole and salt and stir well

    Now add tamarind pulp/Aamchur powder
    Add some water and cover the lid and cook for 8-10 minutes on low flame

    Now add chopped coriander
    Chole is ready

    Serve chole bhature with onions ring and lemon
