This is an easy but delicious sauce using fresh ingredients. Great served over tricolor rotini or with grilled chicken breast.

This is an easy but delicious sauce using fresh ingredients. Great served over tricolor rotini or with grilled chicken breast.
Cooking Instructions

Dice the onion to your preferred size. Sautee over Medium heat in a little olive oil with garlic.

Add onion and garlic to small saucepan. Add the diced tomato and turn to medium heat. Add mushrooms, and zucchini.

Add 1/4 cup of water, and the basil pesto sauce.

Bring to a simmer and turn on low heat, stirring. Cover and stream the vegetables. For 2 minutes.

Add 1/4 cup of tomato paste, the Italian herbs, salt and pepper. Add a little more water, cover and simmer for 20 minutes, stirring occasionally. For your desired consistency, add more water.

Serve over pasta with chicken, and top with parmesan cheese. Optional lol But I think its the best way.

I found fresh basil in a local produce shop at a rest stop on the highway...You can keep this in the fridge for 1 week. You can also freeze it, so when I make it, I put half in the fridge, and the rest in small batches in the freezer.I only have a juicer so I used 100ml of oil (as it doesn't blend very well). 80ml is OK if using a food processor. I made this upon request. Tomato sauce with baked paprika and homemade pesto genovese makes a really delicious sauce.There's no cheese in the pesto genovese, so I add it in.If you mix the paprika in the food processor for 10 seconds, some grains will remain. So I made notes as best I could, but it never tastes quite the same. My husband likes the sauce, so I guess it gets a pass!
