Make a soft dough with the maida,adding 1 tbsp of ghee, and a pinch of salt. Add warm water. Once the dough is made, cover with a wet cloth, and keep for an hour. Here if u want u can add a pinch of orange colour, or keep it plain. I have used colour, so that it looks colourful. This is optional.

Now take the grated khoya, and mix it with powder sugar, some cardamom powder. Mix properly and keep aside.

Take a deep pan, and make sugar syrup. Add whole green cardamom in it,for a good smell. Stir lightly, making sure the syrup should not be thick in consistency. Once done, keep aside, to cool a bit.

Now take the dough, and make small size balls. Roll out the balls into puri shape. Now in the centre,put some khoya filling. Put some water on the empty sides.Now fold one side on top of the filling, and add the other side, on the other top.Securing tightly with water.Turn upside down, and fold again, one on top of each other, making a square shape.Now secure tightly with a clove. Make the rest of the puris in this manner.

Take a karahi and heat ghee. Fry each one in slow heat.Don't crowd the karahi. Once light brown take it out, and put it in a paper towel. Now add the lavanga latika,one by one in the sugar syrup. Toss lightly, for a few minutes, not in the heat. Do not keep it for too long, or it will become soggy. Once it gets coated properly with the sugar syrup, take it out immediately. It can b served hot or cold. If u want decorate with silver foil, to make it look nice.

This should be crispy from outside and soft from inside.
