Serve with bread, a piece of cheese, and a green salad.

In a skillet, sauté the shallot with the sliced mushrooms.

Shred the Comté cheese and mix it into the cream with chopped chives. Season with black pepper.

Place the mushrooms in the bottom of each ramekin, then add the cream mixture and the egg whites (keep the yolks whole and set aside). Place the ramekins in a baking dish with a little water at the bottom for a water bath.

Bake for 20 minutes at 350°F (180°C). Add the egg yolks on top and bake for another 5 minutes.
