1/2red capsicum
500 gChicken Breast Strips
200 gcoconut or almond milk
1/4 cupcrunchy peanut butter
2 tbspsweet chilli sauce
1 tspmild curry powder
150 gsnow peas

Heat pan and add oil.

Add onion & red capsicum and cook till soft.
