Mix maida, semolina, baking soda, cumin seeds, salt, homemade ghee and water to form thick dough.

Spread some flour on a flat surface and using a rolling pin roll the dough in a medium thick roti. Using a cutter cut the roti in shakkarpaare shape.

Then prick the shakkarpaare using a fork to prevent bubbles.

Deep fry the shakkarpaare in oil. Keep aside.

For the sauce, heat oil in a pan. Add cumin seeds & let them crackle. Add asafoetida powder.

Add chopped tomatoes, cover & let the tomatoes cook for 2-3 minutes.

Add water. Mix and add potato paste. Let it simmer.

Add garam masala, red chilli powder, chaat masala, raw mango powder, sugar, turmeric powder, salt. Mix & let the spices cook.

Add chopped coriander leaves & mix.

To assemble the dish, place shakkar pare in the serving plate. Add the sauce, homemade ghee, thick sugar syrup, nylon sev, coriander leaves & chopped & fried green chilli.
