To make dough, mix flour, sugar, yeast, salt, oil and warm water. kneed and cover to rise.

Heat up a pan, add little oil then garlic ginger paste, onions and scotch bonnet. stir fry for a minute and add shredded chicken season and add oregano, parsley and thyme. remove from heat allow to cool.

When dough has risen, lighly flour work surface and roll dough flat. using a cutter cut dough into large rectangle and then into smaller triangle. just like croissant.

Grease a baking tray, take each triangle and arrange then on the tray overlapping each other to make a ring in the center.

Then in another bowl add crushed garlic, melted butter, oil and parsley mix. and rub on the dough. add chicken filling and sprinkle grated mozzarella on top. then take each end of the dough and cover in wards. tuck in to seal the edges. brush more butter mixture all over the dough and bake
