Prepare and wash all ingredients.

Cut the bitter melons in half. Use a spoon to scrape out the inner membrane and seeds to reduce bitterness and keep the melon crisp.

Use a mandoline slicer to cut the bitter melon into thin slices. This helps the melon absorb the dressing and improves the texture.

Toss the thinly sliced bitter melon with a suitable amount of salt to draw out bitterness. Let sit for about 5 minutes.

Drain off the bitter liquid, then place the bitter melon slices in ice water to make them extra crisp. Chill for about 10 minutes.
