Ingredients

  • Hundred and 75 g long grain white rice
  • 2 tablespoonspeanut oil
  • 1garlic clove crushed
  • for spring onions finely chopped
  • hundred and 15 g diced cooked chicken
  • hundred and 15 g cooked peeled shrimps
  • 50 gfrozen peas 1 egg beaten with a pinch of salt
  • 50 glettuce, shredded
  • 2 tablespoonslight soy sauce
  • pinchcaster sugar
  • to tastesalt and black pepper
  • 1 tablespoonchopped roasted cashew nuts for garnish

    Rinse the rice 3 or 4 changes of warm water to wash away some of the starch, drain well

  2. 2

    Put the rice in a saucepan and add 1 tablespoon of the olive oil and 1/2 cups of warm water.

  3. 3

    Cover and bring to the boil, stir once then cover and simmer gently for 12 to 15 minutes, until nearly all the water has been absorbed

  4. 4

    Turn off the heat and leave covered to stand for 10 minutes

  5. 5

    Fluff up with a fork and leave to cool

  6. 6

    Heat the remaining oil in a wok or frying pan, add the garlic and spring onions and stir fry for about 30 seconds

  7. 7

    At the chicken, shrimps and peas and stir fry for about 1 or 2 minutes, then add the cooked rice and stir fry for a further 2 minutes

  8. 8

    Pour in the egg and stir fry until just set

  9. 9

    Stir in the lettuce, soy sauce, sugar and seasoning

  10. 10

    Transferred to a warmed serving bowl, sprinkle with the chopped cashew nuts and serve immediately
