Ingredients

4 servings
  1. 225 gthread egg noodles
  2. 4 tablespoonsvegetable oil
  3. 2garlic cloves finely chopped
  4. 175 gpork tenderloin sliced into thin strips
  5. 1skinless boned chicken breast approximately hundred 175 g sliced into thin strips
  6. hundred and 15 g cooked peeled shrimps
  7. 3 tablespoonslime or lemon juice
  8. 3 tablespoonsOriental fish sauce
  9. 2 tablespoonssoft light brown sugar
  10. 2eggs beaten
  11. 1/2red chilli - or to taste - seeded and finely chopped
  12. 50 gbean sprouts
  13. 4 tablespoonsroasted peanuts, chopped
  14. 3spring onions cut into 5 cm lengths and shredded
  15. 1 tablespoonchopped fresh coriander

  1. 1

    Place the noodles in a large pan of boiling water and leave to stand for about 5 minutes

  2. 2

    Meanwhile heat 3 tablespoons of the oil in a wok or large frying pan and add the garlic and cook for about 30 seconds

  3. 3

    Add the pork and chicken and stir fry on a high heat until lightly browned, then add the shrimps and stir fry for 2 minutes

  4. 4

    Add the lime or lemon juice, fish sauce and sugar and stir fry until the sugar has dissolved

  5. 5

    Drain the noodles and add to the pan with the remaining tablespoon of oil

  6. 6

    Toss all the ingredients together

  7. 7

    Pour on the beaten eggs stir fry until almost set, then add the chilli and bean sprouts

  8. 8

    Divide the peanuts spring onions and coriander leaves into to and add half to the pan

  9. 9

    Stir fry for 2 minutes, then tip onto a serving platter

  10. 10

    Sprinkle on the remaining peanuts, spring onions and coriander and serve at once
