A quick one-dish meal adapted from whatever ingredients are on hand.

Heat a pan and add vegetable oil. Add the green curry paste and stir-fry until fragrant. Add the pork and stir-fry until nearly cooked, then add the milk and mix well.

Add the onion and tomato, stir-fry, then add the glass noodles and a splash of water. Stir everything together. Season with fish sauce and palm sugar, tasting as you go. (Add fish sauce gradually and taste, since the curry paste already contains salt and can make the dish too salty.)

Add the kaffir lime leaves and Thai basil. Stir everything together. (If it seems too dry, add a bit more water or milk. I personally like it on the dry side.)

Transfer to a plate and serve. If you season it mildly, it makes a great one-dish meal. For a bolder flavor, serve with hot steamed rice.
