Kabyle-Style Couscous with Dried Meat (Seksu or Bissar)

Sort and rinse the dried fava beans. Place them in a large pot filled with plenty of water, more than you would use for the broth, and cook until tender. If they take too long to soften, add a little baking powder.

Once the beans are cooked, blend them, then add salt, onion, garlic, spices, celery, dried meat, oil, chicken, and tomato paste.

Cook the artichokes first so you can add them to the broth later to enhance its flavor.

Steam both the wheat and barley couscous as you normally would.

Let the broth simmer until it thickens well before turning off the heat. The broth should not be too red. Serve with hot peppers and dried meat. Enjoy!
