Low Carb Coleslaw (sugar free!)

Can’t use milk like in the KFC copycat recipe, since I wanted it low carb, but also wanted it creamy in taste like KFC's. Also used stevia sweetener instead of sugar.

Btw, I placed the carrots on top to make the picture pretty. Haha! But you can use half a small carrot to keep it low carb.

Hope you like it creamy! 😋

Ingredients

3-4 servings
  • 250 gshredded cabbage
  • 1small carrot, julienned then cut in half
  • 5 stalksgreen onion, chopped
  • 6 Tbspthick cream
  • 4 Tbspmayonnaise
  • 3/4tsp, or to taste, dijon mustard
  • 2 packets (2 g)stevia
  • 2-3tsps,or to taste, apple cider or white vinegar if not available
  • 1/4tsp, or to taste, pink salt or regular
  • Few dashes of pepper

Steps

  1. 1

    Mix all ingredients in a bowl.

  2. 2

    Adjust to preferred taste- tangy, sweet or creamy, thin or thick - by adding more vinegar or dijon mustard (tangy), stevia packets (sweet) or cream &/or mayo to make it thicker.

  3. 3

    Refrigerate before serving. It's nicer when it's chilled. =)
