Ingredients

6 servings
  • For Mexican rice
  • 2 cupssoaked rice
  • 2 tbspbutter
  • 1 cupmixed capsicum chopped
  • 1/2 cupchopped onions
  • 1/2 cupboiled corn
  • 1/2 cupbaby corn chopped
  • 7-8garlic chopped
  • 2 tspchilli flakes
  • 1/2 tspblack pepper powder
  • to tasteSalt
  • For Rajma spread:
  • 2 tbspbutter
  • 1.5 cupboiled rajma
  • 3onions chopped
  • 3tomatoes chopped
  • 10-12garlic chopped
  • 2 tspchilli flakes
  • 3 tbsphot sweet sauce
  • to tasteSalt
  • 0.5 cupWater
  • 1 tspChill powder
  • 1/2 tsporegano
  • 1/2 cupSpring onion whites and greens chopped
  • For sour cream:
  • 2 cupschakka dahi
  • 1 tsplemon juice
  • 1/2 tspblack pepper powder
  • to tasteSalt
  • For salsa:
  • 3onions chopped
  • 3tomatoes chopped
  • 1/4 cupcoriander chopped
  • to tasteSalt
  • 1/2 tspChilli powder
  • 1 tspLemon juice
  • Extra ingredients:
  • As required Cheese grated
  • As neededCoriander chopped
  • As required Green onion chopped
  • As required Nachos chips

Steps

  1. 1

    For Rice. Cook the soaked rice. In a broad pan heat butter. Add garlic and chilli flakes and saute well. Add onions and saute for 1-2 mins. Add all remaining veggies and cook for 2 mins. Add salt, pepper and rice.Mix well and keep aside.

    For Rajma spread. In a pan heat butter. Add garlic and chilli flakes. Saute well. Now add onions and cook until soft golden. Now add tomatoes and cook until soft. Mash with spatula. Add spring onions and kidney beans. Mix well. Add chilli powder, pepper powder, salt, ketchup, oregano chilli powder and mix well. Add water and cook for 2 mins. Keep aside

    For sour cream. In a bowl take hung curd. Add lemon juice 1 tsp. You can always add according to the sourness of your curd. Add salt,pepper and mix well. Keep it in refrigerator untill used.

    For salsa. In a large bowl take onions, tomatoes and mix well. With the help of spatula press the tomatoes to get the juices out. Add salt, chilli powder Coriander, lemon juice and mix well. Keep in refrigerator untill used.

    Assembling. Take a transparent glass. Make a large layer of rice. Upon that make a medium size layer of refried beans. On it make a layer of sour cream and at last a layer of uncooked salsa. Add some crushed Nacho chips and grated cheese. Decorated with some coriander.

    You can make this dish at any party. All the elements you can make in advance. Only rice and refried beans should be served hot. Uncooked salsa and sour cream should be kept in refrigerator.
