Ingredients

  1. For Peach Filling
  2. 6medium fresh peaches
  3. 1/2-3/4 cupgranulated sugar, depending on how sweet ypur peache
  4. 1 teaspoonfresh lemon juice
  5. 4 teaspoonscornstarch
  6. 1/4 teaspoonsalt
  7. For Crumble
  8. 6 tablespoonscold butter, cut into pieces
  9. 1/4 cuppacked light brown sugar
  10. 1 cupall purpose flour
  11. 1/2 teaspoonground cinnamon
  12. 1/4 teaspoonnutmeg
  13. 1/8 teaspoonsalt
  14. 1/4 cuptoffee chips, I used Heath bits
  15. For Serving
  16. as neededvananilla6 or chocolate chip ice cream
  17. as neededwhipped cream

Cooking Instructions

    Preheat the oven to 350. Spray a 8 by 8 inch baking pan with non stick spray

    Peel and pit peaches and slicei im to 1/2 inch slices

    In a bowl combine peache with lemon juice, cornstarch and sugar

  5. 5

    Lay peaches in prepared pan

  6. 6

    In another bowl combine brown sugar, flour, cinnamon, nutmeg, toffee chips and salt, whisk to blend

  7. 7

    Add butter and with a pastry cutter or fork combine until clumps form

  8. 8

    Sprinkle evenly over peaches and bake 40 to a 50 minutes until center is tender and bubbling. If after 30 minutes if it's golden and crisp tent with foil until done. Let sit a few minutes to cool serve warm with ice cream and whipped cream

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
