Ingredients: 2-3 tablespoons freshly chopped parsley; 8-10 Mange-tout peas; 1 salad onion, finely sliced; 1/2 yellow pepper cut into thin strips; 2 cloves garlic chopped or 1 teaspoon chopped garlic; 1 tablespoon red pesto; 2-3 tablespoon olive oil; To taste Salt and pepper; Pasta of your choice for 2 people; Grated Parmesan cheese (optional)

Hot weather in the garden means veggies are growing fast. After a day out walking I cooked up some pasta and tossed through garden veggies from the garden with some store-cupboard ingredients. Fresh or dried pasta both work well.

2-3 tablespoonsfreshly chopped parsley

2 clovesgarlic chopped or 1 teaspoon chopped garlic
1 tablespoonred pesto
2-3 tablespoonolive oil
To tasteSalt and pepper
Pasta of your choice for 2 people
Grated Parmesan cheese (optional)

Steps

Chop /slice garlic, parsley onion mange-tout,yellow pepper (capsicum)

Boil water and cook pasta to taste. Drain.

Stir though all vegetable ingredients and add olive oil and red pesto to taste. Stir and serve immediately with grated Parmesan cheese.
