Ingredients

4 servings
  • 100 gbarrel aged feta
  • 100 gvintage cheddar
  • 50 gparmesan cheese
  • 1medium onion
  • 3 tbspchopped coriander leaves
  • 100 gchestnut mushrooms
  • salt and pepper
  • truffle oil
  • 1roll pre made all butter puff pastry

Steps

  1. 1

    Slice the onions and mushrooms very finely.

  2. 2

    Grease or oil a baking tray and lay the pastry down.

  3. 3

    On half the intact piece of pastry lay down layers of onion, the well chopped cheeses, mushrooms and coriander.

  4. 4

    Drizzle truffle oil generously over the filling, season to taste, fold over the pastry and seal.

  5. 5

    Make a couple of holes in the pastry and if you prefer glaze with beaten egg.

  6. 6

    Bake in a pretty hot oven for 30 minutes or until golden brown.
