Ingredients

  • For litti dough-
  • 2 cupswhole wheat flour
  • 2 tbspGhee or Refined oil
  • Dahi- 2-3tbsb (for soft litti) (optional)
  • 1/4 tbspBaking powder
  • 2 pinchBaking soda
  • Salt as per taste (very light salt)
  • Water for kneading dough
  • For Litti Filling-
  • 1 cupsattu/roasted gram flour
  • 2 tbspLemon juice
  • 1 tbspAjwain (carom seeds)
  • 2-3green chilies (finely chopped)
  • 10-15Garlic Cloves (chopped)
  • 1/2 cupcoriander leaves (finely chopped)
  • 1 tbspMustard oil
  • Salt as per taste
  • For Chokha-
  • 2Eggplant/Brinjal (medium size)
  • 4tomatoes (medium size)
  • 4boiled potatoes (medium size)
  • 1/2 cuponion (optional)
  • 2green chilies (chopped)
  • 1/3 cupcoriander leaves (finely chopped)
  • 1 tbspGarlic (chopped)
  • 1 tbspGinger (chopped)
  • 2 tbspMustard oil
  • Salt as per taste

Steps

  1. 1

    For Litti dough- Add all the ingredients into wheat flour and knead it into a soft dough. Cover and keep it aside for 20 minutes.

  2. 2

    For Litti Filling- Mix all the ingredients and keep aside.

  3. 3

    For Assembling Litti- • Divide the dough into small balls. Roll it and make it into bowl shape (edges are little thinner than the center)

  4. 4

    Place about 2tbsb Sattu mixture in the middle of the dough and close it. Remove excess dough.

  5. 5

    Now heat the Appam pan on medium & grease each moulds with little ghee. Place the Littis in Appam pan. Cover and cook on low flame for 3-4 minutes.

  6. 6

    After 3-4 minutes check it. Turn it and let the other side roast for another 3-4 min on low-medium flame until golden brown.

  7. 7

    For chokha- Take Eggplant & tomatoes washed and dried well. Grease them with little Mustard oil. Then put over a net and roast it on low-medium heat. Time to time flip it and roast all around till skin turns black.

  8. 8

    Once roasted take out the eggplant & tomatoes in plate. Peel the skin after cooling (it takes 15-20 minutes to roast). Add boiled potatoes and mash well with a potato masher.

    Add onion, ginger, garlic, chilies, coriander, mustard oil and salt. Chokha is ready.

  10. 10

    For serving- pour some hot ghee over Littis and serve with Chokha.
