Ingredients

  1. For Green curry
  2. 1stem lemongrass thinly sliced
  3. 1/2 cancoconut milk
  4. 1-3green chilies
  5. 1 cupfresh coriander
  6. 1small onion (chopped)
  7. 4-5 clovesgarlic
  8. 1-2 inchpiece ginger, sliced
  9. 1 tablespoonsoy sauce
  10. 2 tablespoonslime juice (fresh)
  11. 1/2 teaspooncumin (ground)
  12. 1/2 teaspooncoriander (ground)
  13. 1/2 teaspoonpepper powder
  14. 1 teaspoonsugar
  15. 1/2 teaspoonsalt
  16. For adding in the Curry
  17. 1-2 tablespoonsolive oil
  18. 1 1/2 cupstofu (optional panner in place of tofu)
  19. 1/2-3/4 cupvegetable stock
  20. 1green bell pepper (chopped into bite-size pieces)
  21. 1-1 1/2 cupsgreen beans, chopped
  22. 1large tomatoes chopped
  23. 1/2 cupfresh basil (tulsi)
  24. 1/2 cuppeas(matar)
  25. 1/2 cupmushrooms (optional)

Steps

  1. 1

    Take all the ingredients of green curry and make a fine paste.

  2. 2

    You can add more coconut milk to make it smooth.

  3. 3

    Place a large frying pan over medium-high heat. Add 1 to 2 tablespoons oil then add all the green curry paste you just made. Stir-fry 1 minute to release the fragrance.

  4. 4

    Add the tofu or panner, mushrooms and Stir-fry until well coated with sauce.

  5. 5

    Add the vegetable stock. Stir and reduce heat to medium-low. Gently simmer 5 minutes.

  6. 6

    Add the coconut milk, plus vegetables (except basil) and continue simmering 5 to 7 minutes, or until softened.

  7. 7

    Remove curry from heat and taste for salt and spice. Add salt, sugar or pepper if needed.

  8. 8

    Remove to a serving bowl. Sprinkle over the fresh basil.
