Ingredients

Serves 2 servings
  • 1 packagefirm tofu
  • 1 1/3 cupsshredded carrots (about 200 grams)
  • 1 1/3 cupsshredded bamboo shoots (about 200 grams)
  • 1 1/3 cupsshredded wood ear mushrooms (about 200 grams)
  • 1 cupshredded napa cabbage (about 150 grams)
  • 1 cupshredded pork loin (about 150 grams)
  • 3 tablespoonswhole black peppercorns (about 50 grams)
  • 2 tablespoonssesame oil (about 30 ml)
  • 5 tablespoonssoy sauce (about 70 ml)
  • 5 tablespoonsoyster sauce (about 70 ml)
  • 2eggs
  • 1 1/2 tablespoonsChinese black vinegar (about 20 ml)
  • 2 1/2 tablespoonscornstarch (about 40 ml)
  • 12 3/4 cupswater (about 3000 ml)

Steps

  1. 1

    First, bring water to a boil. While waiting, shred the carrots, tofu, and pork. If using dried wood ear mushrooms, soak them the day before.

  2. 2

    Once the water is boiling, add all the ingredients and cook together.

  3. 3

    Season with some black peppercorns, soy sauce, and oyster sauce.

  4. 4

    After thickening with the cornstarch mixture, add the beaten eggs, more black pepper, and sesame oil. Boil on high for 10 seconds, then turn off the heat.

  5. 5

    Finally, add Chinese black vinegar to taste and sprinkle with chopped green onions if desired.
