Pick and thoroughly wash the watercress, as it often has sand. Slice the tomato thinly. Cut the chicken and tofu into small cubes.

Measure 1 bowl of water and bring it to a boil in a pot. Add the chicken and tomato. When it boils, skim off any foam. Season with 1 teaspoon chicken bouillon powder and 1 tablespoon fish sauce. Add the watercress and tofu, let it boil for a few moments, then turn off the heat. Sprinkle with black pepper for aroma. This is a simple, refreshing soup.
